There should be the ability to add new accounts when you're in the year-end adjusting entry screen. Currently if you get half way done and realize you need a new account, you have to close out of the screen, go and add the account, and then come back. You cannot save your changes so you lose all of your previous work. The ability to save and come back would also alleviate this issue.
